Pressure Cooked Pork Roast

Nothing like a pork roast tenderized in a pressure cooker. Makes it so succulent yet so simple. I browned a seasoned pork roast in a pressure cooker then added a pkg of frozen green beans, put water in to the fill like and simmered for 45 minutes. The juice in the bottom of the pan makes for a wonderful sauce. You can make gravy or just spoon a bit over the roast slices. The new potatoes I cut and simmered in a bit of water, butter, coconut oil, parsley and soul food seasoning from Dollar General. What a wonderful meal this was. For dessert we had this delicious ice cream  in small old fashioned soda fountain ice cream glasses.

Here I am, I think…

Happy Mothers Day to all you ladies out there. I suppose I won’t start back in the kitchen until after this day. I don’t follow recipes unless I’m baking. I’ve always created something with what I’ve had on hand. I don’t measure either which leaves a lot of room for the imagination to go into the pot. I go by my moods or a suggestion from my Mother whom I now live with. She is 82 and an inspiration to me in many aspects of life. So…this ought to be interesting since I’ve never blogged before. Just a teaser…

Baked Penne

Had this for lunch. I had left over spaghetti sauce & cooked Penne. I layered these in a two serving Pyrex dish. Topped with grated mozzarella cheese then covered with a Parmesan Romano cheese blend. Baked slowly in a toaster over till browned. Served with romaine salad with homemade dressing. I make mine with Balsamic vinegar, mostly Olive oil, my favorite herbs & spices for a salad. I found that if I blend Parmesan cheese in the dressing it thickens it. Mom was happy so I was too.
